10 Ways To Eat Squash

 
 

Purchase squash that doesn't have any mushy patches and is firm when pressed. Keep in the crisper or a cool, dry location.

Cinnamon Squash with Heat 

To remove the pulp, cut the acorn squash into wedges. Add a drizzle of olive oil. Sprinkle with cayenne and cinnamon. Roast until meat is tender. 

"Baked Potato Skins" with squash 

Butternut squash should be cut into large, even rounds or wedges. Spray oil just a little bit. Roast until meat is tender. Add sliced green onions and grated sharp cheddar cheese on top. Roasting should go on until the cheese melts. Serve with low-fat sour cream dollops. 

Squash-Tarragon Bisque 

Butternut squash should be cut into small pieces. Several shallots should be chopped roughly. Put both into a pot. Add some chicken or vegetable broth over top. up to a boil. Once the squash is cooked, lower the heat and simmer. until smooth, purée. If necessary, thin with extra broth. Add salt and pepper to taste and season with freshly chopped tarragon. 

Potato Squash Salad

Acorn squash stuffed with quinoa

Cook spaghetti squash in the microwave or by steaming. Serve as a pasta alternative and top with cheese, sautéed vegetables, and homemade tomato or pesto sauce. 

Zucchini Fries 

French fry-sized slices of butternut squash should be cut into. oil, and toss gently. Add some chili powder and cumin. Roast until meat is tender. Put some roast chicken on the side. 

Pie with Spiced Squash 

Butternut squash cubes should be roasted till soft. Until very smooth, process in a food processor. Use as a fresh substitute for canned pumpkin in a recipe for pumpkin pie. as specified in the recipe, bake. 

Warm Spinach and Squash Salad with Chevre 

Roasted squash cubes with little oil. Spinach is added when it is tender, allowing it to wilt. (Wilted spinach is the healthiest kind.) Add goat cheese crumbles and toasted almonds, then drizzle with low-fat vinaigrette. 

Fusilli with Mushrooms and Creamy Butternut Squash Sauce 

Cubes of butternut squash should be cooked in a broth and water mixture until they are soft. Thin with a little milk after puréeing. Add freshly ground black pepper, chopped chives, and freshly grated Parmigiano Reggiano. Sauteed shiitake and oyster mushrooms should be added together with cooked fusilli or penne whole-wheat pasta.
